PORK PIECES with POTATOES

We could not think of a fancy name for this recipe.

Should you go to your favourite Chinese restaurant and order sweet and sour pork, for example, you find yourself dining on morsels of pork meat.

I am very sure that we are now on the same wavelength.

Pick up a package of Pork pieces from your butcher or Mr. Chin’s supermarket.

I would like to mention here, on this website you may find alot of references to the term, "Mr. Chin or Mr. Chin's".
I am referring to the many independant, multicultural, supermarkets in Canada.
Since, most of these supermarkets are owned by orientals, where they carry almost everything under the sun, you would be more likely to locate items that someone has recommended to you, whereas larger supermarkets are limited to well known or private label only branded products.

So, you are at home now, and let us continue with making this beautiful recipe.

Defrost, if necessary.

Should you be in a rush, place in a pot with running water to hasten the defrosting process as per the photo.

Discard the water in the pot.

Fill with fresh water, add the pork pieces and thoroughly rinse them.

Fill the pot with enough water to cover the pork pieces.

Bring to a rapid boil for approximately half an hour.

Transfer boiled pork pieces with its juice to a baking tray.

Wash, peel and dice a couple of potatoes,

Do the same to celery stalk.
You may add some more vegetables if you like, for instance, carrots, zuchinni, onions, cho cho, and whatever your heart desires.

Toss them into the baking tray with the pork.

Add the juice of half a lemon, (If you don't have any fresh lemons handy, use Mr. Goudas Lemon Juice or Lemon Seasoning), a bit of oregano, a tablespoon or two of Mr. Goudas Extra Virgin Olive Oil, Salt.
Also, add a tablespoon of Mr. Goudas Trinidad Style Hot Sauce for added flavour
(oink, oink!).

Heat oven to 400 to 420 degrees.

Place in oven for approximately 45 minutes until both the pork and potatoes are tender to your satisfaction.

Simple, delicious and very inexpensive.

To many people, the oil is neccessary, because they dip their bread in the baking tray, which is a treat for them.
However, if you dont like the oil, remove it to suit your taste.
