ZUCCHINI and SQUASH stuffed with Mincemeat (Ground Beef) and Vegetables

Do you love Zucchini and Squash?

The Zucchini is a member of the squash family.
It is a light or dark green vegetable, 4 to 6 inches in length, with a white fleshy pulp, that resembles a cucumber.

Occasionally, you may see a hybrid that is yellow or orange.

Because of its delicate nature and flavour, the Zucchini requires only a short cooking time and is best fried, broiled or baked.

Did you know that the Zucchini adores being cooked in Mr. Goudas Extra Virgin Olive Oil?

It is also excellent when added to soups or stews.

Additionally, stuffed with meat and baked or steamed with other vegetables, it makes for a sumptuous meal.

Mr. Zucchini is a worldwide phenomenon.

Research states it was discovered by the Europeans in Central and South America and the Italians dubbed it zucchino (small squash).

Today, our Cambodian assistant, Chantal, provided us with this recipe:

ZUCCHINI and SQUASH with Mincemeat (Ground Beef), Potatoes and Carrots.

You will need the following ingredients: 1 package of ground beef, a couple zucchinis, squash, green and red peppers, carrots, potatoes, onions, eggplants and green onions, Mr. Goudas – Extra Virgin Olive Oil,   Trinidad Style Hot Sauce, Salt and Pepper.

Wash Vegetables.

Peel carrots and potatoes and cut into very small cubes.

Chop green and red peppers, onions and green onions into very, very small pieces.


Cut the zucchini and eggplant into halves, scoop out and discard the pulp.
Set aside.

Cut the top off the squash, remove the seeds, scoop out and discard the pulp.
Set aside.

Place large frying pan on stove at medium level.

Add a couple cooking spoonfuls of Extra Virgin Olive Oil and heat.

Add ground beef, Trinidad Style Hot Sauce, salt and pepper to taste.
Stir occasionally and continue cooking for approximately 20 minutes.

Add carrots, potatoes, green and red peppers, onions and green onions to ground beef and sauté for an additional few minutes.

The contrasting colours of the vegetables makes this especially appealing to the eye creating visions of deliciousness in the psyche.

Remove from heat.

Carefully stuff (fill) Squash shell, zucchini and eggplant halves with the ground beef and vegetable mixture.

The next step will be to steam the stuffed Squash, Zucchini and Eggplant.

Strategically place them into a colander/strainer or steamer (should you have one).

Choose a pot large enough to hold a colander/strainer.

Fill pot with water and bring to a full boil.

Place the colander with the vegetables on top.

Since we do not have a steamer, we use this method.

Cover and allow to cook (steam) for approximately one hour or until tender to your satisfaction.

This dish may be complemented with a plate of Kalamata Olives,

and Feta Cheese.

Enjoy.

For your information the Zucchini contains potassium, vitamins C, A and B6, iron, magnesium and dietary fibre, in addition 100 g contains only 17 calories.
