Egg Omelette with Karella (Bitter Melon)

How are you doing this morning?
Did you have a good sleep?

Did you have a dream that you were planning to change your breakfast in the morning from the traditional bacon and eggs, hash browns, French Fries, muffins, pancakes, and all that stuff.

Do you know that millions of people around the world cannot go near to the breakfasts described above either because they are overweight or suffer from Diabetes?

Did you know that word the Diabetes exists?
Do you know all the effects and how those who, unfortunately have this illness?

Do you realize that out the blue sky, this sickness could possess you?

Of course, there are several medications, for example, insulin, prescribed by physicians to assist in regulating this condition.

The following article and recipe, without making any medical claims, is a culture-based food remedy that on some occasions and possibly on a regular basis is an alternative/replacement for insulin.

In south-east Asia, particularly, Philippines, Cambodia, Viet Nam and surrounding areas, it is very common that insulin consumption is the lowest than in any other part of the world.

South-east Asians claim through studies that a vegetable called Karella, or Bitter Melon, has a substitute ingredient to the insulin.

Well, let us discuss the Karella for a moment.

It is the same as you see in the photo - what you may call an ugly-looking cucumber.

In addition, to its ugliness, should you try to bite into it, you will be in for a surprise.
No, surprise may not be the correct word; you will be in for a shock.

It is as bitter as the Mauby bark from the Caribbean or the Lupini.

Now the question is how could such a bitter vegetable have a positive effect?

How could anyone take a Bitter Melon, slice it up and eat it.

Believe me that would not, could not be a pleasant experience.

The human mind has already figured out how to go to the Moon, so therefore, it was easy for people to figure out a pleasant way to consume and cover up the bitterness.

One of the ways is to incorporate it into a Breakfast at Tiffany’s, and we are not referring to the Audrey Hepburn years, we are referring to today’s environment in which this disease is so prevalent.

So this morning, let us try the following recipe.

Wash the Karella. Slice and cut into small cubes, together with an onion.

Heat up a small amount of Extra Virgin Oil in a large frying pan.

Add Karella and onion and sauté for a couple minutes.

In a separate bowl scramble a couple Eggs.

Add salt and black pepper to taste and a tablespoon of Mr. Goudas Trinidad Style Hot Sauce.

Pour over the sautéing Karella and onions.

Fold half of the Omelette over, and cook for a minute or two until the eggs are cooked.

Now, your Omelette is ready.

I would like to warn you that the first bite would be a little bitter to you.
The second bite would be less bitter.
The third bite would be even less bitter.

I no longer can the Karella because it not marketable anymore because there is so much fresh on the market.

Since I am in business for many years and talk to people from this part of the world, I came to the conclusion that there must be some truth into this home remedy.
