Yellow Split Peas is a type of Pea that grows is Canada, primarily on the Prairies - Saskatchewan and Manitoba.

Although, the Yellow Split Peas is not popular within the Canadian Cuisine or many other nationalities for that matter, it is a major part of the diet of the Caribbean and East Indians.

It is 1/4 of an inch in diameter.
It is normally a whole pea that is split into two parts.

Here is a question, what is the big deal?
According to me, it is a big deal when it comes to the splitting of the Pea because if you do not have the right machinery, instead of splitting the Pea, the Pea will be cracked with small pieces broken from the edges.

Consequently, when it is packaged into bags, many companies for weight purposes place the cracked peas into the packages.

The cracked pieces tend to break even further in the bag making the inside lining dusty, dirty and ugly in appearance.

I decided to market Yellow Split Peas, many years ago in the early 1970's. 

I ensured that prior to packaging, to remove all the cracked and broken pieces.

I even went a step further to remove any split pea dust by polishing them.

What on earth does polishing the Peas mean?
The Peas are placed in a machine and brushes gently to remove the excess dust without damaging the edges.

That is why when you purchase Mr. Goudas Yellow Split Peas you should take a photo before you consume them because they look so pretty.

Back to our information.

Now is the time to reveal cooking instructions which are very simple.

Basically, you rinse the Peas.
Place them in a pot, cover with water and boil until it almost forms a paste or is tender to your taste.

Is that not simple?

You do not have to spend six years at Cooking School, neither do you have to have a Diploma.
You only have to develop a taste for this type of Pea.

In addition to the dry format, I have developed Yellow Split Peas in the can.

The picture on the right portrays an item dedicated for export to the Caribbean, particularly to Trinidad and Tobago, which is considered the national dish of this country. 

Most of the people have a preference for Chick Peas, Red or White Kidney Beans, Black Eye Peas, etc.

The Yellow Split Peas in a can, however was developed in such a way that upon opening the can, you will notice that the Peas are in a soft or maybe close to a pulp format.

Let's stay on this issue for a minute.
At the time, I had spent endless and sleepless nights, to acheive that appearance.
I did test, after test, after test, so that the peas will not be in a hard format altogether, or in a paste or pulp format altogether.

During the heat penetration canning process (this process is called retort), one degree for one minute more, can result and produce a pulp format of this pea.

On the other hand, one degree for one minute less, in retort will result in a hard format of the peas.

The specific appearance that Mr. Goudas Yellow Split Peas has is precisely what Trinidadians and other nationalities look for.

Now back to our preparation.

The amount of salt is at a minimum and the only thing you have to do is place the contents in a Blender and oscillate until it becomes a paste.

Pour the paste into a dish and follow word by word these instructions:

Dice 1 Onion into very small pieces, no bigger than a quarter of an inch.
Take 1 Celery Stalk, (up to and including the leaves) wash and cut into small pieces.
2 cloves of Garlic, clean and cut into tiny pieces.

A few leaves of Parsley cut into small, small pieces.

1 blade of Green Onion (Chive) cut into very small pieces. A few slices of a Green Pepper cut into small pieces.

Mix the ingredients together and garnish the top of the Yellow Split Pea Paste.

Add the juice of 1/2 a Lemon, by the way, I have a variety of Lemon Juice and concentrates in bottles ready to use, however, we suggest you use fresh lemon juice, because there is nothing else better than a fresh lemon.
and 2 tablespoons of Extra Virgin Olive Oil

(Of course, you know which Brand by now.)

Today, August 12, 2012 is the Closing Ceremonies of the 2012 Olympics in London, England and Canada achieved very few medals.
