EGGS OMELETTE with MEAT BALLS or SAUSAGE breakfast

The humble egg has always been considered as part of a nutritious breakfast.

However, with the ever increasing popularity of omelettes, eggs have now migrated to the brunch, lunch and dinner table.

2 or 3 eggs left over meat and/or vegetables, oil/butter and a frying pan, are all you need.

Sausages or meatballs (recipe on www.flyermall.com)
2 tablespoons Extra Virgin Olive Oil or Soya Oil
Salt and pepper
1 teaspoon Mr. Goudas Trinidad Style Hot Sauce (it adds all the flavour in the world)
1 teaspoon Mr. Goudas B for Best Sauce (which makes this into an omelette fit for a king or a queen)

Heat oil in frying pan over medium heat.

Add sausages and fry for 1 or 2 minutes.

Break 2 or 3 eggs in a separate bowl and whisk with a fork, add hot sauce.

Pour over sausages.

Allow eggs to cook for a couple minutes.

Salt and pepper to taste.

Garnish with sliced tomatoes and B for Best Sauce.

Excellent served with fresh sliced bread, rolls, bagels, and of course, home fries.

For absolutely perfect omelettes, use a spatula to gently fold the cooked eggs in half.

If you a bit more of an expert, slide the eggs out of the frying pan directly unto the plate.

(You may not be able to perfect it the first time, but keep trying.)
