RICE with SPINACH (in Greek Spanakorizo)


3/4 cup parboiled or basmati rice
1 onion
2 cloves of garlic
1 cup Chicken Broth
1 package of fresh spinach or 1 - 2 cans of Mr. Goudas Spinach
1 tablespoon Mr. Goudas Trinidad Hot Sauce
juice of 1 lemon (remove seeds)
4 tablespoons of Extra Virgin Olive Oil or Soya Oil

In medium casserole, pour 1 cup of water, 1 can of chicken broth, lemon juice and oil.

Add onion (diced into large pieces), garlic (chopped finely), hot sauce, salt and pepper to taste.

Bring to a boil and add rice.

Reduce heat to low, cover and simmer for approximately 20 minutes, until rice is tender to your taste.

For this particular dish, the most suitable rice is Parboiled or Basmati Parboiled.

Arborio or scented rice are not suitable.

A few grains fresh aniseed would give an extraordinary aroma to this dish.

Serve hot or cold.

You may add a few pieces of your favourite cheese, feta or kasseri.

For vegetarians, replace the Chicken Broth with water.

(Because of the spinach recalls due to e-coli contamination in the United States lately, the safest alternative would be the canned spinach, mentioned above.)
