LIMA BEANS AND SQUID

Method 1
1 lb Lima beans
1/2 lb baby squid
1 lemon
1 onion
3 tablespoons Olive Oil
Salt and Pepper

Soak the lima beans overnight.
The following day, drain the water and check for stones or any foreign objects.

Add fresh water and boil for one and a half hours until the beans are tender.
Drain the water and transfer the beans into a bowl.

Chop the onion into thin slices and add to the beans.
Add olive oil and lemon juice. Mix thoroughly.

Carefully clean the squid and boil until tender.
The duration of cooking time is dependent upon the squid purchased.
Baby squid boils for approximately 20 minutes.

Transfer the beans to a platter.
Place pieces of squid around the beans and garnish with slices of lemon.

Method 2

Remove you apron and oven mitts and pick up the following:

1 can of Mr. Goudas Lima Beans
1 can of Mr. Goudas Squid
1 onion
1 lemon
3 tablespoon of Olive Oil

Open cans and drain the water. Place on a plate, cut the onion into small pieces, and pour the juice of the lemon and the olive oil over the beans and squid.

Gently mix and voila! Enjoy.

Serve with freshly baked bread.
