PEPPERS FLAME ROASTED in the OVEN

Method 1
4 red sweet peppers
4 or 5 cloves of garlic
3 or  4 tablespoons of Olive Oil
1 tablespoon of basil
2 teaspoons vinegar
(Coriander - optional)

Preheat to 475 degrees.
Wash peppers, cut in half and remove the tops and the seeds.
Chop garlic in small pieces.
Place peppers in large baking tray and pour olive oil over them.
Place in oven (uncovered) for approximately 40 minutes.

Cook until the skin appears to be slightly burnt on the outside.

Remove from the oven. Slice into pieces, salt and pepper to taste.

Apply the chopped garlic and sprinkle a little basil (should you like the taste).
Add a few drops of vinegar and a little olive oil.

When your recipe calls for Olive Oil to enhance the taste, should you not select the best Extra Virgin Olive Oil, grown, packaged and processed in Greece with an acidity level of 0.1 to 0.8 per cent..  
Mr. Goudas Extra Virgin Olive Oil, of course!

(You may even sprinkle a little coriander if you so choose.)

As you can see this is a very simple recipe. Some people prefer to prepare this over an open fire. But regardless of how you prepare this, it is a lot of fun and a very good delicacy.

Method 2

Simply purchase a bottle of Flame Roasted Peppers. Keep in your cupboard until your appetite calls for it. If you are in Canada, the recommended brands are: Krinos, Fandis, Mr. Goudas, Ariston, Aurora and S & F.

When this happens, open the jar, place one or two on a plate.
Slice and eat as is, or add some olive oil and garlic.

If you have never eaten Roasted Peppers from the jar then you are missing out on a treat.

They may be used as an appetizer, in bruschetta, pizza or on a slice of bread with a little cheese.
