4 - 5 red bell peppers (1 yellow or green pepper adds colour to this recipe)
1 large onion
2 cloves garlic
1/2 cup Herbs and Dice Tomatoes
1 cup Parboiled Rice
salt and pepper to taste
1 tablespoon  Trinidad Style Hot Sauce
1/3 cup Extra Virgin Olive Oil or Soya oil

Wash peppers, cut off the top at the stem (do not discard the top).
Remove the seeds and clean the inside of the pepper.

Heat oil in frying pan at medium level.
Add chopped onion. Saute for a few minutes until onions are golden in colour.

In a medium pot add 1 cup of water, tomatoes, rice, hot sauce, garlic (chopped finely), salt and pepper to taste.
(If you are a meat lover, you may incorporate minced meat at this stage.)
Boil for 5 minutes only.
Stir often to blend in ingredients.

Stuff the inside of each of the bell peppers with the rice mixture and cover with the stem.

Gently place stuffed peppers on a lightly oiled baking tray.

Add 1/2 cup of water and 1/4 cup of oil, cover and place in the oven for 15 minutes at 375 degrees.

Remove tray from oven, turn peppers over and check the status of cooking and estimate how much additional cooking is necessary.

Return to oven for an additional 5 to 10 minutes.

The length of cooking time is dependent upon how soft the peppers are and how tender the rice is. Usually Parboiled Rice can withstand extensive cooking periods.

Once the peppers and rice are tender to your taste, remove from oven and serve to avoid overcooking.

This dish could be eaten either hot or cold.
It actually tastes better the next day.
