Easy to make Cheese Cake
2 pks. (8oz. cream cheese)
1 cup white sugar
1/2 cup sour cream
2 tsps. vanilla extract
2 tsps. lemon juice
1 can cherry, raspberry or strawberry pie topping
1 prepared pie crust (pie topping and pie crust are available in the baking or pastry isle of your local grocer or even at Dollarama)

Today, if you are one of the many, you'll realize how quick and easy it is if you follow these simple instructions and soon I'm sure you'll be putting your own spin on things.
Like incorporating some Bailey's Rum Cream- it's awesome- but I will share that recipe at a later date.
Now it's time that you save that $5.00 bill per slice and make a lovely 9 inch cheese cake that you can enjoy entirely.

By now you have gathered the ingredients so lets go.
Preheat oven to 325 degrees F (165 degrees C).
Place cream cheese in a bowl.
Cream together cream cheese and sugar. on medium to low- do not overbeat.
Add eggs one at time, blending well and add lemon juice- this helps to cut the rawness of the eggs.
Add vanilla and sour cream.
Pour into prepared crust.
Bake for 40 minutes in preheated oven.
Turn off oven and leave cheese cake sitting there in warm oven for additional 20 minutes.
Then remove from oven and leave on counter to cool.
Refrigerator for four hours but if possible overnight.
Remove from pan when completely chilled, and serve with your favourite topping.
*** You could also spread yout topping on top before putting it in the refridgerator to cool***
