Are you familiar with this vegetable called the Endive?

Europeans, particularly Italians, call it radicchio, and at times, may be simply plucked from the side of roadways where they grow wild.

Endives are a green, leafy, vegetable which you may know as chicory, that bitter flavour that is added to some beer, stout, coffee and smoked meats.

On that note you are immediately aware that this vegetable has a bitter taste.

However, once you acquire the taste, you know what you are in for.

Bitter is good!

Endives are an excellent source of Vitamins A, K and C, Calcium, Magnesium, Manganese and Dietary Fibre.

Pick up a bunch at your local retail outlet.

Cut off and discard the roots.

Rinse leaf and stem portions a couple times to remove any residue.

Cut into 2 or 3 inches pieces.

Place in a large pot and fill with water.

Bring to a full boil. 

Reduce to medium heat and cook until tender, approximately one hour. 

Drain excess water and transfer to serving platter or individual plates.

Garnish with fresh Lemon slices, a dash or two of Mr. Goudas Extra Virgin Olive Oil, Sea Salt and Black Pepper to taste.


The excess water can be use as a drink.
