COUSCOUS

Couscous, made from durum wheat semolina, is very easy to make.

1 cup uncooked couscous
1 cup water
2 tablespoons of olive oil
salt and pepper to taste

Directions:

Pour water into a small pot and bring to a boil. Turn off the stove. Pour uncooked couscous into the pot, stir a few times and place lid over pot. Let sit for approximately five minutes to allow the couscous to become swollen.

Remove lid and gently fluff your couscous with a fork. Add Olive Oil, salt and pepper to taste.

Couscous is traditionally served topped with your favourite meat, seafood or vegetables.

It may also be served as it as a side dish.

Sprinkle with cinnamon, almonds and a little sugar and serve as a dessert.
