POTATOES AND ZUCCHINI IN TOMATO PASTE

Cut a couple potatoes into 1 inch cubes. Slice Zucchini in half inch slices.

Place potatoes in a medium sized pot and cover with water.

Add 1 or 2 tablespoons of Tomato Paste, salt and pepper to taste, 2 or 3 tablespoons of Extra Virgin Olive Oil.

Boil for 10 to 15 minutes.

Add Zucchini slices in the last few minutes of cooking until water evaporates.

This is a wonderful dish, complemented with crusty bread, feta cheese and a few Olives.

Many people have the wrong perception that Olive Oil has lots of Cholesterol. This is incorrect, since it contains NO CHOLESTEROL.
