Chicken Thighs or Wings
Salt and Black Pepper
Extra Virgin Olive Oil
Mr. Goudas Trinidad Style Hot Sauce
1 can Mr. Goudas Sliced Pineapples
1 can Mr. Goudas Sweet Peas
2 small Onions
This food recipe is popular on the island of Hawaii.

Wash Chicken Thighs or Wings.
Fry in Extra Virgin Olive Oil for 4 to 5 minutes until slightly golden in colour.
Place in an oven casserole.
You may add a few pieces of diced Potatoes, small pieces of Carrots and the 2 Onions cut in halves.
Add you favourite BBQ Sauce evenly over the chicken.
My personal favourite is Kraft BBQ Sauce with Garlic.
Add 1-1/2 cups of water and 4 or 6 tablespoons of Extra Virgin Olive Oil.
Cover with foil paper and bake for 10 to 15 minutes at 375 degrees.
Remove from oven and place 5 to 6 slices of Pineapple in between.
Estimate if there is enough water for an additional cooking time of 10 to 15 minutes.
Add little salt and pepper and 1 to 2 tbsp. of Mr. Goudas Trinidad Style Hot Sauce (this is mandatory).
Cover and place back in oven.
The dish will be finished by the time all the water evaporates.
You may serve with Rice and a spoonfull of Sweet Peas.
I suggest the use of Extra Virgin Olive Oil.
It is important to understand that not all Olive Oils on the market may be classified as Extra Virgin.
