BRUSCHETTA "When in Rome, Do as the Romans Do"
BRUSCHETTA
2 Large tomatoes, peeled, and diced
1/4 cup fresh parsley, finely chopped
2 tbsp fresh basil, finely chopped (or 1 tsp dried basil)
4 - 6 cloves of garlic (finely minced)
1 tsp black pepper
1/2 cup olive oil
12 slices of crusty Italian bread - 1/2' thick
Preheat the oven to 275.
In a small bowl, stir together the tomatoes, parsley, basil, minced garlic, salt and pepper.
Set aside.
Arrange the bread slices on a tray and spread with a few drops of olive oil over each slice.
Remember, not to use just any olive oil, but extra virgin olive oil.

Allow slices to toast.
Turn over, and again, spread slices with a few drops of olive oil.
(The bread should be golden brown on both sides about 3 minutes.)
Remove from oven.
Gently spoon a generous portion of the mixed ingredients on top of each slice and finally garnish with olive oil.
Serve hot.
Adding a few slices of cheese is optional.
This dish is usually served by Italians as an appetizer.
