ST. PATRICK'S DAY SALAD - Irish Salad


This salad is made by Dr. P. MacKenna, one of the top surgeons in Canada.
He happens to be Irish. So if it is good for the Irish, it is good for us too.

We asked him how he cut the slices so thinly, he smiled and stated, "After all, I am a surgeon!" (This is your smile for the day).

These are the ingredients you will need.

1 broccoli
1 cauliflower
1 zucchini
2 celery stalks
1 parsnip
1 carrot
1 onion
1 tablespoon Mr. Goudas 7 Flowers Honey
1 tablespoon Mr. Goudas Trinidad Style Hot Sauce - optional

A dash of the following Mr. Goudas spices adds that special zest to the flavour of the vegetables: black pepper, seasoning salt, parsley, and garlic powder.

Wash vegetables to remove any dirt or residue.
Cut broccoli and cauliflower into small pieces.
Cut zucchini and celery into very thin slices.
Dice onion. Shave the parsnip and carrot.
Combine all ingredients in a large bowl.
Layer nicely for appearance, with zucchini on top.
Add 1/4 cup of water, spices and honey and microwave for 4 to 5 minutes.

Enjoy with a pint of green ale, or 1 bottle of Guinness, after all, it is St. Patrick's day!

This does not mean you wait once a year to make this salad. It is delicious any time of the year.

It is very nutritious, healthy, easy to digest will all the vitamins in the world. We will, therefore, call it the Irish Salad.
