The attached picture shows dumplings made the Caribbean way.
It is excellent in soups, with curry goat, callalloo and with ackees and cod fish (salt fish).
1 cup All Purpose Flour (Mr. Goudas, Five Roses, Robin Hood)
1 cup Corn Meal (Mr. Goudas or Grace)
1/.4 cup of Extra Virgin Olive Oil or Soya Oil
1 cup of water
1 teaspoon salt
Pour flour, corn meal, oil and salt into a large mixing bowl.
Add water. Combine ingredients to form dough.
Knead and roll into a ball.
Fill a medium sized pot 3/4 full of water and bring to a boil.
Add a pinch of salt and 1 tablespoon of oil.
Sprinkle flour on the palms of your hands.
Pinch off a golf ball sized piece of dough and flatten between the palms of your hands.
Gently place into the boiling water.
Repeat this procedure until all the dough is used up.
Reduce heat to medium and allow dumplings to cook.
Approximately 20 minutes.
Serve with dishes as mentioned above.
This is very healthy food.
