CHICKEN STRIPS

2 chicken breasts (boneless)
1 small onion
2 cloves of garlic
2 tablespoons Mr. Goudas Jerk Seasoning
2 tablespoons Extra Virgin Olive Oil or Soya Oil
Salt and Pepper to taste

Wash chicken breasts and cut lengthwise into 3/ 4 to 1 inch thick strips.

Place chicken in a marinating bowl. Add chopped garlic and onion, jerk seasoning, salt and pepper to taste.

Gently shake bowl to combine ingredients with chicken.

In a large frying pan, heat oil over medium heat. Using a fork, place the chicken strips in the frying pan and fry for a few minutes until brown. Turn strips over and repeat procedure.

Preheat oven to 375 degrees F.

Remove chicken strips from frying pan and transfer to a baking tray and place in the oven.

(You may pour the gravy from the frying pan over the chicken, should you so choose).

Bake for approximately 15 minutes, then turn strips over and continue cooking for an additional 10 to 15 minutes, or until chicken strips are completely cooked to your satisfaction.

Delicious when served on a bed of Mr. Goudas Rice - plain, basmati, parboiled, with or without mixed vegetables (refer to rice recipes on this website), and a side salad.

To receive additional complements (if not dining alone), place chicken strips on a plate lined with lettuce, tomatoes and onions. Add 1 tablespoon of extra virgin olive oil, salt and pepper and a tad of lemon juice accompanied by individual bowls rice.
