PENNE PASTA with Mr Goudas CRUSHED TOMATOES

2 cups of penne
2 chicken leg/thigh pieces
1/2 Crushed Tomatoes
4 tablespoons of Olive or Soya Oil
2 cloves of garlic
1 onion
1 tablespoon of Mr. Goudas Trinidad Style Hot Sauce
Parmesan or Romano Cheese
Salt and pepper

Wash chicken and cut into four pieces.

Using a large frying pan, heat the oil and add the chicken.

Fry for approximately 15 to 20 minutes under medium heat, turning occasionally.

When just about ready, add the chopped onions and continue frying.

Once the onions become golden in colour, add sliced garlic, crushed tomatoes, hot sauce, salt, pepper, and 1 cup of water.

Cover, reduce heat and continue cooking.

Fill a medium casserole 3/4 full of water and bring to a boil.

Add penne, 1 tablespoon of oil and little salt. Continue boiling until penne is tender to your taste.

When ready, drain the excess water.

In the meantime, check the chicken to ensure that all the liquid has not evaporated and the meat is slightly falling off the bone (approximately 30 minutes).

Add the penne to the frying pan and allow the juice to penetrate the penne.
This will take 1 or 2 minutes.

This meal has to be eaten immediately.
So, have your serving plates ready.

Sprinkle generously with Parmesan or Romano cheese and complement with a glass of your favourite wine, and a couple slices of Italian bread.

Throw away the Viagra for tonight ... you will not need it!
