POTATO PUREE with GARILC (SKORDALIA)

2 large Potatoes
5-6 cloves Garlic, minced
1/2 cup Extra-Virgin Olive Oil
1/2 cup Water
5 tablespoons freshly squeezed Lemon Juice
Salt

Wash potatoes thoroughly.

Place potatoes in a medium saucepan and cover with water, add salt.

Bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook until very tender, approximately 20 minutes.

Drain the potatoes and let cool.

Remove the skin and place them in a medium sized bowl. Mash with a fork.

In a food processor, place the potatoes, oil, garlic, 1/2 cup of water, lemon juice, salt to taste.

(If it is still too dry, add a little more water, but do not let it become too watery!) Blend/Puree until the mixture become soft and creamy.

May be served as an appertizer, side dish, topping for bread, a dip, etc. etc.

This is so delicious, you may find yourself dipping even your fingers ever so often like a kid. (A friendly suggestion, this will enhance your romantic life too - provided you let your partner have some - otherwise you may have to sleep outside of the house.

You may also have some comments from your co-workers the next day at your workplace or you may find yourself all alone on a crowded bus/streetcar/subway!!
(Remember Garlic breath is a wonderful thing only to a garlic lover.)
