RICE LEEKS AND RICE

1 cup Parboiled Rice
1 bunch Leeks
1 carrot
1/2 cup of diced tomatoes 
Salt and pepper to taste

1 onion
2 tablespoon Extra Virgin Olive Oil
1 tablespoon  Hot Sauce
Thoroughly wash leeks to remove any dirt. Trim the roots at the base and at the top. Cut into 1 inch pieces. Dice carrot and onion.

In a large frying pan, warm the olive oil over medium heat. Add leeks, carrot, onion and hot sauce, stir-fry for a few minutes. Add diced tomatoes, 2 cups of water, 1 cup of rice and reduce the heat. Cover and simmer, stirring occasionally, for approximately 15 to 20 minutes or until the rice is tender to your taste and all the liquid is absorbed. Add salt and pepper to taste.
(You may add 1 tablespoon of dill, if you like the taste.)
Remove from heat and let cool for a few minutes.

This dish is refreshingly superb eaten as is or simply delicious accompanied with your favourite meat dish.

As you can see it is not very difficult to make this dish. However, if you do not feeling like cooking and would like to treat yourself to a tasty but inexpensive dish, Mr. Goudas has captured the wonderful taste of Leeks and Rice and has magically canned it in a can. The most difficult aspects for you will be opening the can, heating the contents and waiting that whole minute to savor the flavour.

Leeks have been a source of food for thousands of years, treasured by the Ancient Egyptians, Greeks, and Romans who distributed it throughout Europe.
This humble vegetable is actually mentioned in the Bible at least twice.

Obviously in the old version of the Bible did not have the above recipe, however, should it be revised and re-introduced, it will most certainly incorporated because this dish is so wonderful, it would be the ideal healthy meal to introduce to the young generation as opposed to their present fascination with junk food.

Leeks are available year-round in certain countries. They have a sweet, subtle flavour making it ideal for inclusion in a variety of dishes. Good leeks are firm and smooth, free of blemishes with beautiful green leaves and flat bottoms (round bulbs mean that the leeks are old).
