1 lb Chick Peas
2 tablespoons of Olive Oil or Soya Oil
2 cloves of garlic
2 tablespoons of Mr. Goudas Curry Powder
1 tablespoon of Tomato paste
1 tablespoon of Mr. Goudas Trinidad Style Hot Sauce
Salt and Black Pepper to taste
Soak chick peas overnight in water (check for any foreign objects or stones), add 2 teaspoons of baking soda.
Next day, drain off overnight water, thoroughly rinse the chick peas and boil in fresh water for approximately 45 minutes or until tender to your taste.
Remove the chick peas from the water, which will be used as stock for curry.
Pour oil in a large frying pan and heat at medium level. Add onions and garlic finely chopped and saute for 2 to 3 minutes until golden in colour.
Add curry powder and saute for an additional few minutes. Dilute the tomato paste in 1 cup of stock from the chick peas and add to the sauteing curry mixture. Add 1 cup of stock or water, hot sauce, salt and pepper to taste. Continue stirring to blend all the ingredients.
Reduce heat to low and add the chick peas. Continue cooking for an additional 15 to 20 minutes stirring occasionally. Do not let all the liquid evaporate since it is needed as the curry sauce.
