1 lb Lentil peas
2 medium or one large onion
6 cups of water
4-5 cloves of garlic
4-5 tablespoons Extra Virgin olive oil or vegetable oil
3-4 Bay leaves
few leaves of Spinach (optional)
Parmesan Cheese (optional)
Salt and Black Pepper to taste
Rinse the lentils well in cold water check for stones and foreign objects regardless of which brand is purchased.
Peel and roughly chop the carrots and onions.
Place the lentils, chopped vegetables and 6 cups of water in a large pot.
Add bay leaves (this will make all the difference in the world), and bring slowly to a boil.
Reduce heat and simmer gently for about 25 to 30 minutes, or until the carrots are cooked but are still firm.
Remove from heat and allow the soup to cool for 10-15 minutes if possible before eating.
A nice bowl of Lentil Soup should be complemented with fresh bread, a little cheese and some olives.
There are 3 major varieties of Lentil peas.
Laird which is quite large in size, but there is not enough thickness or body.
It is very easy to cook but melts into pulp quickly.
There is no picture of the Laird Lentils.
Richlea which is medium sized and will hold the body and retains its size after cooking.
This Lentil appears on the right in the picture above.
Eston lentils are very small in size and also retains its body after cooking.
This Lentil is shown in the picture above on the left.
The greeness of the peas indicates that it is the current years crop.
The brown ones indicate last year or the year before.
(Some cultures prefer the brown colour believing that the taste is better.
This is a matter of opinion.)
The mix colour peas indicate that the packer attempted to sell old inventory with the new.
This is a very simple recipe and should be attempted by everyone.
Lentil soup is very nutritious and is an ideal meal especially on a cold day.
Upon searching for a Lentil Soup recipe on the internet you will find that there are endless variations in the method of preparation.
Some include as ingredient requirements bacon, pork hocs, chicken broth, beef bones, etc., etc.
Our recipe is simple and tasty, any of these additions will spoil its simplicity.

Did you know Canada is one of the largest producers of green lentils?
Surprising isn't it as many Canadians don't know much about lentils or its use.
Instead they prefer to line up like hounds in the drive through and at fast food restaurants waiting eagerly to order hamburgers and fries.
It is unfortunate that we crave all the unhealthy and fattening things we really shouldn't consume.
These bad habits then lead to health complications like diabetes, cardio vascular issues and obesity.

It will change your perspective on food.
All this talk of food has me craving some Hummus which is considered a national food in many Middle Eastern countries including Iraq, amongst other foods like dolmades, lentils and white kidney beans which is often used in soup.
They also make extensive use of raisins and nuts like almonds, pistachio, and walnuts etc., etc., in desserts and snacks as well.
Iraq (formally known as Persia), one of the oldest country's in the world, had historically turbulent periods but George Carlin- the guy with the crazy facial expression, was able to look back at those periods and create comedic moments.
George Denis Patrick Carlin, was an American comedian, writer, social critic, and actor who was recognised for his exceptional abilities and the recipient of five Grammy Awards for his comedy albums.
He died at 73 years on the 22nd of June 2008,
Although many people don’t know or remember him, I'm sure after watching the video clip, one will see how he had the ability to turn seemingly horrible situations into comedic and entertaining jokes…
In the video clip depicted, he spoke about about the war in Iraq, New York's water quality, the Bush administration, war in Vietnam and so on.
He even touched on obesity.
George, also spoke about air travel and joked about terms and phrases associated with safety while on a plane and the waste of land allocated to play golf while the homeless remained "houseless".
He spoke about serious topics but in a satirical way- that is by using humour.
Mr. Goudas believes, George "John" Carlin is one of the best comedians of his era, as a matter of fact in the world.
He told joke after joke and never stopped for but a few seconds in between jokes.
George had the remarkable ability to give details and statistics, do calculations and quote historical data all effortlessly by memory and in a humourous way.
His audience was always amused and captivated by his performances.
So while your pot is a bubbling and your meal slowly, cooks to perfection, you may want to click here, have a seat, enjoy and entertain yourself.
