3 pounds of small onions
1/2 a cup of olive oil
10 ounces of red wine
10 cloves of garlic
3 tablespoons of tomato paste
3 bay leaves
1 stem of rosemary
salt to taste
1 teaspoon of sugar
2 tablespoons of vinegar

The preparation of this recipe is time consuming and needs a lot of patience.
Clean the onions by removing the excess top and bottom parts, making sure that the leaves do not come apart.
Select small onions about 1 inch in diameter.
Place the onions in a large pot, add the olive oil, vinegar, and wine (to get the onions drunk).
Peel the 10 cloves of garlic and add to the mix.
Add the tomato paste, bay leaves, rosemary, sugar (to take away the acidity of the tomato paste), salt, and finally enough water to cover all the ingredients.
Begin to cook under high heat initially, until the water begins to boil, then lower the heat to medium and cook for another 25-30 minutes, until the onions are soft.
This side dish is best served with chicken or rabbit. If you are a vegetarian, rice is the best bet.

So you see It is very simple! Anybody can do it! As long as you have the patience to peel all the onions so carefully!
