It was the night before Christmas when the telephone rang. It was a friend of Hispanic descent who had called with holiday greetings and to let us know that she was bringing over a special little gift.
At about 7:30 p.m. she arrived with her son and gift in hand: it was a simple but delicious meal accompanied by a bottle of red wine.
The meal consisted of white rice, potato salad and steak. We were touched beyond words.
The meal itself was superb but the potato salad was out of this world. There was an ingredient which was delectable and we all tried to determine what it was... it was a little tart, not sweet, and it seemed to melt into the potato and little green peas with each bite.
We finally discerned that it was "apple"- yes, little cubes of green apple. Never before had any of us ever had apple in potato salad. It was incredibly delicious.
We had to get this recipe and it is our New Years gift to you:
1 green Apple
1cup sweet peas
1/3 cup Miracle Whip
1/3 cup Extra Virgin Olive
Salt, Pepper, Paprika
Peel and dice potatoes and place in saucepan, cover with water and bring to a boil. Reduce heat and continue to cook until potatoes are almost tender, approximately 20 minutes. Remove from heat and drain excess water. Place potatoes in medium glass casserole dish. Peel, core and dice apple into 1 inch cubes, add to potatoes. Add sweet peas, Miracle Whip, Extra Virgin Olive Oil, and salt and pepper to taste. Gently mix ingredients and sprinkle with paprika.
